bean burger salad with creamy avocado dressing

There are so many variations to bean burgers using various types of beans, and mixing up the ingredients. I usually make a different bean burger up as I go along every time

Ingredients

Bean burgers (makes about 5 burgers)

  • 19 oz. can of black beans
  • ½ cup quick cooking oats or gluten-free breadcrumbs
  • 1 tbsp. ketchup, make it homemade!
  • 1 tbsp. prepared dijon mustard
  • 1 tsp. smoked paprika
  • ¼ cup diced onion

Salad

  • few handfuls of salad greens
  • 1-2 diced tomatoes
  • grilled potatoes
  • 1 diced bell pepper (any color)
  • sliced red onion
  • few cilantro leaves

Dressing

  • 1 ripe avocado
  • ½ tsp. salt
  • juice of ½ a lemon or lime
  • ¼ cup cilantro
  • filtered water as necessary to thin out dressing

Directions

  1. Burgers – mash all ingredients together, mashing some of the beans as you go along, leaving some beans whole and form into patties with your hands.
  2. Grill patties in a skillet on medium heat until browned.
  3. Dressing – puree all ingredients in a blender, food processor or magic bullet until you reach desired consistency.
  4. Assemble salad ingredients on a plate, top with grilled burgers then pour on the creamy avocado dressing
